OVERNIGHT STEEL CUT OATS
With 10 minutes of work the night before, you can have delicious steel cut oats in the morning.
Ingredients:
3 cups water
1 cup steel cut oats
1/4 teaspoon salt
1 cup whole milk (or nut milk)
2 tablespoons dark brown sugar
Topping options: fresh berries, dried fruit, bananas, toasted nuts, maple syrup
Method:
The night before, bring 3 cups water to boil in large saucepan over high heat. Remove pan from heat; stir in oats and salt. Cover pan and let sit at room temperature overnight.
In the morning, stir milk and brown sugar into oats and bring to boil over medium-high heat. Reduce heat to medium and cook 4 to 6 minutes, stirring occasionally, until oats are softened. Oats should retain some chew and the thickened mixture should resemble warm pudding.
Adorn with your favorite toppings. Try fresh berries during the spring and summer and chopped apples and maple syrup in the colder months.
