NO-BAKE COOKIES

Who doesn’t love these peanut butter and chocolate mounds of goodness? They’re easy to make—just be sure to boil them long enough so they set up firmly.

Ingredients:

1 stick butter

2 cups sugar

1/2 cup milk

1/4 cup cocoa

1/2 cup peanut butter

1 teaspoon vanilla

3 cups quick-cook oats

Method:

In a medium saucepan, bring butter, sugar, milk and cocoa to a boil, stirring constantly. Keep mixture at a full boil for 90 seconds. Remove from heat, and stir in the peanut butter and vanilla. Slowly add the oats, stirring to combine.

Drop large dollops (about 2-3 tablespoons) onto parchment paper lined cookie sheet.

Give cookies a festive twist by topping with holiday sprinkles before cookies cool completely. Once cooled, arrange in holiday muffin liners for a cheerful display.
